Servings: 2 | Prep Time: 10 minutes (plus 15-30 minutes marinating) | Cook Time: 8 minutes | Total Time: 18 minutes (plus resting)

This elegant seared salmon features the sophisticated pairing of Blood Orange Olive Oil and Chocolate Balsamic Vinegar. The combination may sound unusual, but the citrus and chocolate create a complex, gourmet flavor profile that's perfect for dinner parties and special occasions.

Salmon Ingredients

  • 2 salmon fillets (about 1.5 inches thick)
  • 2 tbsp Blood Orange Olive Oil, divided
  • 1 tsp Himalayan salt (or sea salt)
  • 1 tsp ground pink peppercorns (or black pepper)
  • 1 tsp ground cane sugar
  • 1 tbsp finely grated orange zest
  • 1 tbsp Chocolate Balsamic Vinegar

Marinade Ingredients (Optional)

Directions

Prepare the Salmon:

  1. Pat salmon fillets dry with paper towels.
  2. Season both sides generously with salt, pepper, and sugar.
  3. Optional: Whisk together marinade ingredients and pour over salmon. Cover and refrigerate for 15-30 minutes (up to 1 hour).

Sear the Salmon:

  1. Heat 1 tbsp Blood Orange Olive Oil in a large skillet over medium-high heat.
  2. Carefully place salmon fillets skin-side down in the hot skillet.
  3. Cook for 3-4 minutes per side, or until internal temperature reaches 145°F.
  4. While cooking, spoon hot pan juices over the salmon for extra flavor.

Rest and Serve:

  1. Remove salmon from skillet and let rest for 5-7 minutes to allow juices to redistribute.
  2. Garnish with additional orange zest, fresh herbs, or a drizzle of Blood Orange Olive Oil if desired.

To Serve

Serve immediately with rice, quinoa, pasta, or a fresh salad. For an elegant presentation, consider a simple salad with blood orange segments, arugula, and a light vinaigrette made with Blood Orange Olive Oil and Aged Traditional Dark Balsamic Vinegar. Pairs beautifully with a crisp Sauvignon Blanc, dry Rosé, or light Pinot Noir!
