Basil Poached Atlantic Salmon

This light and healthy poached Atlantic salmon features the fresh flavor of basil olive oil and a touch of sweet heat from pineapple habanero balsamic. It's an elegant yet simple dish that's ready in just 20 minutes, perfect for a quick weeknight dinner or special occasion.

The key is to start with the skin side down and cook gently, drizzling the balsamic gradually to build layers of flavor while keeping the salmon moist and tender.

Ingredients

  • 2 fillets Atlantic salmon
  • 3 tbsp basil olive oil
  • Salt and pepper to taste
  • ¼ cup olive oil
  • 1 tbsp butter
  • ¼ cup white pineapple habanero balsamic vinegar

Directions

  1. Drizzle 3 tbsp olive oil over salmon fillets, pink side up. Season with salt and pepper to taste. Set aside.
  2. In a medium skillet, heat basil olive oil and butter to medium-high heat.
  3. Add salmon fillets skin side down and cook for 2 minutes.
  4. Reduce temperature to medium-low and drizzle small amounts of pineapple habanero balsamic over both fillets.
  5. Continue cooking for an additional 5-10 minutes, adding balsamic gradually.
  6. Remove fillets from heat and drizzle any remaining balsamic over the top.
  7. Allow to rest for 5 minutes before serving.
