This bold and spicy chicken dish brings Mexican-inspired flavors to your dinner table in under 40 minutes. Simmered in Bloody Maria Mix with Cilantro Lime Olive Oil, peppers, and jalapeños, this recipe delivers a zesty, flavorful meal that's perfect for busy weeknights.

Ingredients
- 2 chicken legs or breasts
- 1 medium onion, chopped
- 1 small bell pepper, chopped
- ½ jalapeño, diced
- 3-4 garlic cloves, coarsely minced
- 1½ cups Bloody Maria Mix
- ½ cup Cilantro Lime Olive Oil
- ½ tsp salt
- ½ tsp chili powder
- Black pepper to taste
Directions
Prepare the Chicken:
- Coat chicken with a small amount of Cilantro Lime Olive Oil, salt, and black pepper. Set aside.
- Chop onions, bell pepper, jalapeño, and garlic. Keep them separated and set aside.
Cook the Dish:
- Put a small amount of Cilantro Lime Olive Oil into a skillet and heat to medium-high.
- Add chicken and sear both sides for 1 minute to lock in moisture.
- Lower heat to medium and add bell peppers, onions, and jalapeños. Sauté until tender, about 3-4 minutes.
- Add minced garlic and stir in. Cook for 1 minute.
- Pour in Bloody Maria Mix and remaining Cilantro Lime Olive Oil.
- Cover and lower temperature to simmer for 20 minutes, or until chicken is cooked through.
To Serve
Serve over Spanish rice or lime cilantro rice with a fresh salad for a complete, zesty Mexican-inspired meal!
