Bloody Maria Chicken

Bloody Maria chicken with peppers and onions

Ingredients

  • 2 chicken legs or breasts
  • 1 medium onion, chopped
  • 1 small bell pepper, chopped
  • ½ jalapeño, diced
  • 3-4 garlic cloves, coarsely minced
  • 1½ cups Bloody Maria Mix
  • ½ cup Cilantro Lime Olive Oil
  • ½ tsp salt
  • ½ tsp chili powder
  • Black pepper to taste

Directions

Prepare the Chicken:

  1. Coat chicken with a small amount of Cilantro Lime Olive Oil, salt, and black pepper. Set aside.
  2. Chop onions, bell pepper, jalapeño, and garlic. Keep them separated and set aside.

Cook the Dish:

  1. Put a small amount of Cilantro Lime Olive Oil into a skillet and heat to medium-high.
  2. Add chicken and sear both sides for 1 minute to lock in moisture.
  3. Lower heat to medium and add bell peppers, onions, and jalapeños. Sauté until tender, about 3-4 minutes.
  4. Add minced garlic and stir in. Cook for 1 minute.
  5. Pour in Bloody Maria Mix and remaining Cilantro Lime Olive Oil.
  6. Cover and lower temperature to simmer for 20 minutes, or until chicken is cooked through.

To Serve

Serve over Spanish rice or lime cilantro rice with a fresh salad for a complete, zesty Mexican-inspired meal!
