Grilled Pork Loin with Smoked Olive Oil & Apricot Balsamic

This grilled pork loin features smoky olive oil and sweet apricot balsamic for a perfect balance of flavors. The Cajun seasoning adds a spicy kick, while the low and slow grilling method ensures tender, juicy meat with a beautiful caramelized exterior.

Marinating for at least 4 hours (or overnight) allows the flavors to penetrate deep into the meat. The key is grilling low and slow to prevent the olive oil and balsamic from burning while developing amazing flavor.

Ingredients

  • 1 pork loin (2-3 lbs)
  • 4 tbsp smoked olive oil
  • 4 tbsp apricot balsamic vinegar
  • 3 tsp Cajun seasoning
  • 1 tsp salt
  • 1 tsp black pepper

Directions

Marinate:

  1. Place pork loin in a large resealable bag.
  2. Add smoked olive oil, apricot balsamic vinegar, Cajun seasoning, salt, and pepper.
  3. Seal bag and massage to coat pork evenly.
  4. Marinate in refrigerator for at least 4 hours or overnight.

Grill:

  1. Preheat grill to high heat, then reduce to low.
  2. Remove pork from marinade and place on grill.
  3. Cook low and slow for about 45 minutes, turning occasionally.
  4. Grill until internal temperature reaches 140-145°F for medium.
  5. Remove from grill and let rest for 10 minutes before slicing.
