Meyer lemon sole with blueberry balsamic glaze

Ingredients

  • 1 lb Dover sole fillets
  • 1 tbsp sunset fish fry seasoning (or your favorite fish seasoning)
  • 3 tbsp Meyer lemon olive oil, divided
  • 1-2 tsp blueberry balsamic vinegar

Directions

  1. Sprinkle sunset fish fry seasoning evenly over both sides of the sole fillets.
  2. Drizzle 2 tsp Meyer lemon olive oil over the fillets. Set aside.
  3. Heat a skillet with remaining 2 tbsp Meyer lemon olive oil over medium heat until hot.
  4. Add seasoned fillets to the pan and immediately reduce heat to low.
  5. Drizzle blueberry balsamic vinegar over the fillets.
  6. Cook gently for about 6 minutes, or until fish is opaque and flakes easily with a fork.

To Serve
