Monterrey stew with Persian lime and chili balsamic

Ingredients

  • 1 lb stew meat (beef), cut into bite-size pieces
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 1 jalapeño pepper, minced
  • 4 cloves garlic, finely minced
  • ⅓ cup + 2 tbsp Persian lime olive oil
  • 4 tbsp lime juice
  • ¼ cup chili balsamic vinegar
  • ¼-½ bag slaw mixture

Salt Mixture Ingredients

  • 1 tsp smoked salt
  • ½ tsp garlic granules
  • ½ tsp dried minced onion
  • 1 dried Hawaiian pepper (or dried chili pepper)

Directions

Prepare the Salt Mixture:

  1. Place smoked salt, garlic granules, dried onion, and dried pepper into a mortar and pestle.
  2. Grind to a fine powder. Set aside.

Season and Prepare:

  1. Season stew meat thoroughly with the salt mixture. Set aside.

Sauté the Vegetables:

  1. Place 2 tbsp Persian lime olive oil in a medium skillet and heat over low heat.
  2. Add onions and peppers. Sauté until onions are tender and transparent.
  3. Add minced garlic and continue to sauté for 2 minutes.
  4. Transfer mixture to a separate bowl and set aside.

Cook the Stew:

  1. Add remaining ⅓ cup Persian lime olive oil to the skillet and heat over medium-high.
  2. When oil is sizzling, add seasoned meat and stir to brown on all sides.
  3. Lower heat and add lime juice to the mix.
  4. Cover and cook for 10 minutes.
  5. Add ¼-½ bag of slaw mix and stir in.
  6. Drizzle chili balsamic over the mixture.
  7. Let sit for 5 minutes to rest and allow flavors to meld.

To Serve

Serve hot with lime cilantro rice, fresh citrus slaw, and warm corn tortillas for an authentic Monterrey-style meal!
