Ingredients

  • ¼ cup bread crumbs
  • 2 tbsp fresh parsley, chopped
  • 1½ tbsp Parmesan cheese, grated
  • 1 tsp fresh thyme
  • 1 tsp Tuscan herb & garlic dipping blend
  • 2 boneless, skinless chicken breasts
  • Sea salt and freshly cracked pepper, to taste
  • 2 tbsp honey dill mustard (or artisan mustard of choice)
  • 1 clove garlic, minced
  • Avocado oil for coating pan

Directions

Prepare the Coating:

  1. Preheat oven to 450°F.
  2. Coat a baking sheet with avocado oil.
  3. On a plate, mix together bread crumbs, fresh parsley, Parmesan cheese, fresh thyme, and Tuscan herb & garlic blend. Set aside.
  4. In a small bowl, mix honey dill mustard with minced garlic.

Coat and Bake:

  1. Season chicken breasts with salt and pepper.
  2. Brush mustard-garlic mixture generously onto both sides of each chicken breast.
  3. Dip chicken breasts into the bread crumb and herb mixture, pressing gently to coat both sides evenly.
  4. Transfer seasoned chicken breasts to the prepared baking sheet.
  5. Bake for 20-25 minutes, or until a meat thermometer reads 165-170°F.
  6. Remove from oven and let rest for 7-10 minutes before slicing.
