Parmesan Garlic & Truffle Mashed Potatoes

Ingredients

  • 3½ lbs russet potatoes
  • 2 tbsp black truffle sea salt
  • 1 tbsp sea salt
  • 2 cups (16 fl oz) half-and-half
  • 6 cloves garlic, crushed
  • 6 oz grated Parmesan cheese
  • 3 tbsp Parmesan garlic olive oil

Directions

Cook the Potatoes:

  1. Peel and dice potatoes into uniform pieces (about 1-inch cubes).
  2. Place in a large saucepan and add sea salt.
  3. Cover with cold water and bring to a boil over medium-high heat.
  4. Reduce heat to maintain a rolling boil.
  5. Cook until potatoes fall apart when poked with a fork, about 20-25 minutes.

Prepare the Cream Mixture:

  1. While potatoes cook, heat half-and-half and crushed garlic in a medium saucepan over medium heat.
  2. Bring to a simmer, then remove from heat and set aside.

Mash and Finish:

  1. Drain cooked potatoes thoroughly.
  2. Return to pot and mash until smooth.
  3. Add the garlic-cream mixture and grated Parmesan. Stir to combine.
  4. Add Parmesan garlic olive oil and black truffle sea salt. Mix well.
  5. Let stand for 5 minutes to thicken before serving.
