Parmesan Garlic & Truffle Mashed Potatoes

These ultra-creamy mashed potatoes are infused with Parmesan & Garlic Olive Oil and luxurious Black Truffle Sea Salt for an elegant side dish perfect for holidays and special occasions.
Ingredients
- 3½ lbs russet potatoes
- 2 tbsp Black Truffle Sea Salt
- 1 tbsp sea salt
- 2 cups (16 fl oz) half-and-half
- 6 cloves garlic, crushed
- 6 oz grated Parmesan cheese
- 3 tbsp Parmesan & Garlic Olive Oil
Directions
Cook the Potatoes:
- Peel and dice potatoes into uniform 1-inch cubes.
- Place in a large saucepan, add sea salt, cover with cold water, and bring to a boil.
- Cook until potatoes fall apart when poked with a fork, about 20-25 minutes.
Prepare the Cream Mixture:
- While potatoes cook, heat half-and-half and crushed garlic in a medium saucepan over medium heat.
- Bring to a simmer, then remove from heat and set aside.
Mash and Finish:
- Drain cooked potatoes thoroughly. Return to pot and mash until smooth.
- Add the garlic-cream mixture and grated Parmesan. Stir to combine.
- Add Parmesan & Garlic Olive Oil and Black Truffle Sea Salt. Mix well.
- Let stand for 5 minutes to thicken before serving.
