Persian Lime & Chili Chicken Tacos

These zesty Persian lime and chili chicken tacos feature tender baked chicken with crispy bacon, all topped with a tangy chili balsamic drizzle. The combination of citrus and heat creates a perfect balance of flavors that's both refreshing and satisfying.

Ingredients

  • 2 lbs chicken breast
  • ¼ lb bacon
  • Tomato, diced
  • Lettuce, shredded
  • 2 tbsp Persian lime olive oil
  • 2 tbsp chili balsamic vinegar
  • Salt to taste
  • 1 tsp lemon pepper
  • Shredded cheese (optional)
  • Tortillas

Directions

Prepare and Bake:

  1. Preheat oven to 375-400°F.
  2. Coat chicken breasts with Persian lime olive oil on both sides.
  3. Coat a baking pan with Persian lime olive oil as well.
  4. Season chicken with salt and lemon pepper to taste.
  5. Place chicken in the prepared pan and bake for about 25 minutes, or until internal temperature reaches 165°F.
  6. While chicken bakes, line a separate pan with foil and arrange bacon strips.
  7. Bake bacon at 375-400°F for 25 minutes (higher temperature creates crispier bacon).
  8. Remove bacon and place on a plate lined with paper towels. Let rest.

Assemble Tacos:

  1. When chicken is done, shred or cut into bite-sized pieces.
  2. Chop cooled bacon into thin strips or crumble.
  3. Warm tortillas and fill with chicken, bacon, lettuce, tomato, and cheese if using.
  4. Drizzle chili balsamic vinegar over each taco.
