Ingredients
- 2 lbs chicken breast
- ¼ lb bacon
- Tomato, diced
- Lettuce, shredded
- 2 tbsp Persian lime olive oil
- 2 tbsp chili balsamic vinegar
- Salt to taste
- 1 tsp lemon pepper
- Shredded cheese (optional)
- Tortillas
Directions
Prepare and Bake:
- Preheat oven to 375-400°F.
- Coat chicken breasts with Persian lime olive oil on both sides.
- Coat a baking pan with Persian lime olive oil as well.
- Season chicken with salt and lemon pepper to taste.
- Place chicken in the prepared pan and bake for about 25 minutes, or until internal temperature reaches 165°F.
- While chicken bakes, line a separate pan with foil and arrange bacon strips.
- Bake bacon at 375-400°F for 25 minutes (higher temperature creates crispier bacon).
- Remove bacon and place on a plate lined with paper towels. Let rest.
Assemble Tacos:
- When chicken is done, shred or cut into bite-sized pieces.
- Chop cooled bacon into thin strips or crumble.
- Warm tortillas and fill with chicken, bacon, lettuce, tomato, and cheese if using.
- Drizzle chili balsamic vinegar over each taco.
