Pork Green Chili Moki Bean Soup

Ingredients

  • 1 lb Moki bean soup mix
  • 1 lb pork stew meat, diced
  • 1 large onion, diced
  • 1 large bell pepper, diced
  • 1 can stewed tomatoes
  • 3 cloves garlic, minced
  • 3 roasted green chilis, chopped (about ½ cup)
  • 1 tsp salt
  • 1½ tsp fresh cracked black pepper
  • 1½ tsp ground chili powder
  • 2 quarts water

Directions

Prepare the Beans:

  1. Clean and rinse Moki beans.
  2. Place beans in a large pot and cover with water (at least 2 inches above beans).
  3. Soak overnight.
  4. In the morning, drain beans.

Slow Cook the Soup:

  1. Place drained beans in a large crock pot.
  2. Add diced pork, onions, bell pepper, roasted green chilis, and stewed tomatoes.
  3. Add about 2 quarts of water to the pot.
  4. Cook on medium heat for 6-8 hours.
  5. After several hours, add minced garlic, salt, black pepper, and chili powder.
  6. Stir occasionally throughout the day.
