Servings: 4 | Prep Time: 15 minutes | Cook Time: 25 minutes | Total Time: 40 minutes

These tender steak tips are seared with portobello garlic olive oil and finished with cream sherry and smoked balsamic vinegar for a rich, sophisticated flavor. The colorful bell peppers and onions add sweetness and texture, making this a complete one-pan meal.

The key is searing the meat first to lock in juices, then simmering with sherry to tenderize, and finishing with the vegetables and smoked balsamic for layers of complex flavor.

Ingredients

  • 1 lb sirloin steak, cut into bite-sized pieces
  • 4 tbsp portobello garlic olive oil, divided
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 medium white onion, sliced and quartered
  • 1 small green bell pepper, diced into bite-sized chunks
  • 1 small red bell pepper, diced into bite-sized chunks

  • 3 cloves garlic, finely chopped
  • ¼ cup cream sherry
  • Smoked balsamic vinegar, to drizzle

Directions

Prepare the Steak:

  1. Place cut steak in a large bowl.
  2. Add salt, pepper, and 2 tbsp portobello garlic olive oil. Stir well to coat. Set aside.
  3. Cut onion into sliced quarters and peppers into bite-sized chunks. Set aside.
  4. Finely mince garlic and set aside.

Cook the Steak:

  1. Heat a large skillet with remaining 2 tbsp portobello garlic olive oil over high heat.
  2. Add seasoned steak and sear on all sides, stirring occasionally.
  3. Once seared, reduce heat to low and add half of the cream sherry.
  4. Cover tightly and simmer for 10 minutes.

Add Vegetables and Finish:

  1. Add onions, peppers, and remaining cream sherry to the skillet.
  2. Continue cooking on low for 8 more minutes.
