Seared Ahi Tuna w/ Lavender Macadamia Nut Crust

This restaurant-quality seared ahi tuna features a unique lavender macadamia nut crust and a bright cilantro lime honey sauce. The key to perfect seared tuna is high heat and quick cooking - just 10 seconds per side to create a beautiful crust while keeping the center rare and tender.

Remember that fish continues to cook even after it's removed from heat, so don't over-sear it. Cooling the tuna in the freezer for 10 minutes makes it much easier to slice cleanly for an elegant presentation.

Tuna Ingredients

  • 1 ahi sashimi block (¼ lb)
  • 3 tbsp lavender macadamia nut seasoning
  • 2 tbsp macadamia nut flour
  • 1 tbsp chili and garlic macadamia nut oil (or olive oil)

Cilantro Lime Sauce Ingredients

  • ½ cup fresh cilantro, chopped
  • 1 tbsp pineapple hot sauce
  • 1 tbsp fresh lime juice
  • 1 tbsp organic wild honey
  • 1 tbsp soy sauce
  • 1 tbsp water

Directions

Prepare the Tuna:

  1. Season the ahi sashimi block with lavender macadamia nut seasoning, making sure to cover all four sides with a heavy layer.
  2. Heat macadamia nut oil in a sauté pan to high heat.
  3. Once oil is hot, reduce heat to medium.

Sear the Tuna:

  1. Place seasoned sashimi block in the hot oil.
  2. Sear each side for exactly 10 seconds per side.
  3. Remove from heat immediately to prevent overcooking.
  4. Place seared ahi in the freezer for 10 minutes to cool and firm up for easier slicing.

Make the Sauce:

  1. While tuna is cooling, combine cilantro, pineapple hot sauce, lime juice, honey, soy sauce, and water in a bowl.
  2. Mix well until combined.
  3. Pour sauce onto a serving plate and set aside.

Slice and Serve:

  1. Once the tuna has cooled, use a very sharp knife to cut it into ½-inch slices.
  2. Arrange sliced tuna on the prepared plate with sauce.
  3. Garnish with shredded carrots, sliced cucumbers, and bean sprouts.

To Serve
