Thai Noodle Bowl w/ Peanut Roasted Chili Garlic Sauce

This delicious Thai noodle bowl features marinated chicken, fresh vegetables, and a spicy peanut sauce made with Roasted Chili Olive Oil. The combination of creamy pad Thai sauce with the heat from the chili oil creates an authentic Thai flavor that's both satisfying and customizable to your spice preference.

Ingredients
- 1¾ cups creamy pad Thai sauce
- 3 chicken breasts, cut into bite-sized cubes
- 8 oz pad Thai noodles
- 2 bell peppers (any colors), cut into thin strips
- 2 large carrots, cut into thin strips
- Fresh cilantro
- ½ cup crushed peanuts
- 2 tbsp Roasted Chili Olive Oil
Directions
Marinate the Chicken:
- Cut chicken breasts into bite-sized cubes.
- Mix chicken with ¼ cup pad Thai sauce and Roasted Chili Olive Oil.
- Marinate in the refrigerator for at least 30 minutes.
Prepare and Cook:
- While chicken marinates, cut bell peppers and carrots into thin strips.
- Preheat oven to 375°F.
- Place marinated chicken in a single layer on a non-stick baking sheet.
- Bake for about 15 minutes, or until chicken is cooked through.
- While chicken bakes, cook pad Thai noodles according to package instructions. Drain and set aside.
Assemble:
- In a large bowl, combine cooked noodles, baked chicken, sliced peppers and carrots, and remaining pad Thai sauce.
- Toss everything together until well combined.
- Top with crushed peanuts and fresh cilantro.
To Serve
Serve hot with extra Roasted Chili Olive Oil on the side for those who want more heat.
